This gluten-free bright apple slaw is a refreshing accompaniment to anything from burgers to rice bowls!!! It has a beautiful balance of acidic, sweet, and salty that will really make your dish pop!

- mustard - 1 tbs.
- olive oil - 1/2 tbs.
- crip red apple - 1/2
- scallion - 1
- dried parsley - 1 tbs.
- feta cheese (optional but HIGHLY recommended) - 1-2 tbs.
