
Chicken Tinga

Ingredients
- fire roasted tomatoes - 1 can
- skinless boneless chicken thighs - 2 lbs.
- onion (diced) - 1
- garlic cloves (minced) - 3
- cinnamon - 1 tsp
- cumin - 1 tsp
- oragano - 1 tsp
- chipotle powder (or paprika) - 1/2 tsp
- salt - 1/2 tsp
- liquid smoke - 2 tsp
Instructions
1. Pour the can of tomatoes in the instant pot first. Place the chicken in and toss the onions and garlic on top. Sprinkle the seasonings over everything and add in the liquid smoke.
2. Cook on low for 6 hours or on high for 3 hours. Shred the chicken with two forks once cooked. Serve on chips or in tortillas!
