
Ham Bone Soup
This gluten-free ham bone soup is one of the easiest and most satisfying dishes ever! It is infused with deep flavor from the ham bone, and the lemon juice adds a brightness right at the end that really takes this soup over the top. This soup is also very good for you since it develops natural bone broth from simmering the ham bone in it for so long. Enjoy!
Ingredients
- ham bone - 1 (fresh or frozen)
- large carrots (peeled and coarsely chopped) - 2
- large onion (roughly chopped) - 1
- lima beans (frozen) - 24 oz.
- black eyed peas (frozen) - 1 c.
- chicken stock - 2 c.
- water - 2 c.
- lemon juice - 1/2 lemon (squeezed)
- salt - 1 tsp (or to taste)
- pepper - 1 tsp.
Instructions
- Combine all ingredients into a large soup pot and bring to a boil.
- Turn the heat down to simmer and simmer on the stove for 3-4 hours.
- Add the lemon juice at the last half hour of cook time.
- Strip all the meat off of the ham bone and remove it from the pot.
- Cool and enjoy!
