Pork Carnitas
This is one of the easiest recipes I have ever made...EVER!!! As a mom of three who homeschools and works early in the mornings before school, this recipe has given me some much-needed rest and it gives my family a fantastic meal at the end of our busy day. It takes five minutes to stick everything in the crock pot, another five to stick it on the plate, and about 2 seconds to inhale it. Yes, it's that good! All three kids kept asking for more meat. This meat is incredibly tender and buttery and soaks up an amazing amount of flavor during the cooking time.

Ingredients
- Boneless Pork Shoulder Butt Roast - 2-3 lbs
- salt - 2 tsp
- paprika (or chili powder) - 1 tsp
- cumin - 2 tsp
- dried oregano - 1/2-1 tsp
- large onion - quartered
- garlic cloves - 3
Instructions
- Cover the top of the meat with the salt, paprika (or chili powder), cumin, and oregano. Place onion and garlic to the side of the meat and let all of it cook on low for about 6 hours in the crockpot.
- Shred meat and place on top of corn or gluten-free flour tortillas.
- Garnish with guacamole, sour cream, and cilantro!
